Red Cabbage Slaw with Soft-Boiled Egg on a Baguette
With its delicious combination of flavours, this sandwich is far easier to make than you might think! This one’s going to become a staple in your lunchbox.
INGREDIENTS:
Shredded red cabbage
Grated apple
Chopped walnuts
Reduced Fat Plain Yoghurt
Lemon juice
Tablelands Dairy Free Buttery Spread or Tablelands Reduce Cholesterol Spread
French baguette
Chopped chives
Soft-boiled eggs, quartered
METHOD:
Place cabbage, apple, walnuts into a bowl and mix through with yoghurt and lemon juice (ingredient proportions based on taste). Season to taste with pepper.
Spread baguette with Tablelands Dairy Free Buttery Spread or Tablelands Reduce Cholesterol Spread. Top with coleslaw, chives and egg.
